Yogurt Cream Cheese Pie
½ cup non-fat milk
1 T. (1 pkg) unflavored gelatin
½ cup sugar (or splenda)
1 cup pureed fat-free cottage cheese, plain yogurt, or fat free cream
cheese
6 T. lemon juice
1 cup whipped topping
1 9” crumb crust
Place milk and gelatin in a small saucepan and heat to scalding. Add sugar
or Splenda and stir to dissolve. Pour into a blender and add cottage
cheese and lemon juice—then puree. Pour into a small mixing bowl and fold
in the whipped topping. Pour into a graham cracker crust and chill until
set.
You may top with berries or other fruit.
