Transformations: The Napa Valley Weight and Lifestyle Management Program ™

Green Thumb Slaw
(Yields 8 servings)

3 cups shredded greens-romaine or spinach
3 cups shredded cabbage—green, red, or Chinese
1 cup julienne carrots, jicama or turnips
¾ cup canned kidney beans, rinsed
¾ cup canned garbanzo beans, rinsed
2 tomatoes, chopped
½ cup dry roasted peanuts

Yogurt Poppyseed Dressing

½ cup plain non-fat yogurt
½ cup low fat mayonnaise
1 tsp. poppyseed
¼ tsp. granulated garlic
¼ tsp. salt
1 tsp. lemon juice

1. Combine dressing ingredients in a small bowl and set aside
2. Prepare and combine vegetables, beans and peanuts.
3. Toss with the dressing
