For Healthy Holiday Parties, Try The “70-30 Rule”
Holiday parties are known for an abundance of rich, high calorie foods,
beautifully presented, and just about impossible to resist. For those
planning to entertain during the coming holidays (or anytime),
dietitian Vicki Saunders, MS, RD has a menu-planning secret that promises
to keep guests happy — and healthier too. It’s called the “70-30 Rule”.
“When I prepare party menus for friends, I of course want to please the palate — but I’m also focused on taking care of their health too,” says Saunders, Nutrition Educator at Transformations, St. Helena Center For Health’s weight and lifestyle management program in the Napa Valley of Northern California. “My solution is to prepare an array of dishes that are 70% healthful, 30% indulgent — but all eye appealing and delicious.” Saunders says that the 70-30 Rule subtly games the intake of calories and saturated fats, with guests none the wiser. “The preponderance of choices are healthy, and after years of entertaining this way, I’ve never heard a complaint. In fact most of my guests ask for the recipes before they leave.” This holiday season Vicki plans to anchor her spread with hot artichoke dip, red bell pepper hummus dip, black bean and corn salad with savory salad dressing and green thumb slaw with yogurt poppy seed dressing. “Bake pita triangles lightly sprayed with olive oil to dip in the hummus,” she suggests. Other suggested nibbles include vegetarian meatballs (or low fat turkey) in sweet and sour barbecue sauce, vegetable pot stickers and tomato bruschetta on sourdough toast. “Make open faced sandwiches on party rye bread, spread with fat-free Philadelphia cream cheese, thinly sliced cucumber, red onion and fresh dill sprig,” suggests Saunders. “Or mix the cream cheese with mango chutney.” For sweeter dishes, she’ll offer her holiday guests Jewel Tapioca pudding and yogurt cream cheese pie.
